Easy side dishes are a must for busy families. After spending time on your main course, sometimes the last thing you want to do is spend a bunch of time on the sides. Luckily, this Easy Oven Roasted Red Skin Potatoes recipe is one of the most simple side dishes that you can make.

This side dish recipe is extremely versatile too. It goes well with just about any kind of meat for dinner, like roasted chicken, meatloaf, or pork tenderloin. They’re also delicious served for breakfast along with eggs.

What are Red Potatoes Good For?

The star of this recipe is red skin potatoes, of course. They are less starchy than russet potatoes and denser too. You know how you fluff up your usual brown russet baked potato? Red Skin Potatoes aren’t considered the best for fluffing up. But they are great for lots of other uses, like roasting, pan-frying, smashing, or for boiling to use in potato salad or soups.

So you know you need red skin potatoes, but what else? The rest of the ingredients are staples that you probably have in your kitchen already. You’ll need olive oil, minced garlic, onion powder, Italian seasoning, salt, and pepper.

Can I Substitute the Ingredients?

Lacking one or more of these items? The great news is that this recipe is easy to adapt. Don’t have olive oil? Use vegetable oil. Don’t have Italian seasoning? Use another dried herb (or leave it out). To be honest, you can make excellent Oven Roasted Red Skin Potatoes with only the oil and the salt and pepper.  (Although…we do think the garlic makes them crazy good!)

How To Clean Red Potatoes Without a Brush

Before you get started making your oven roasted potatoes,  you’ll want to make sure that they are clean. We use plenty of clean water and a vegetable brush that helps to get all the dirt out of the little dips and crevices.

While we do recommend using a vegetable scrubber to clean your red potatoes, there are a few options if you don’t have one. The most simple option is to use a clean dishcloth (not your usual kitchen sponge) and start wiping away the dirt while holding the potato under warm running water. Be sure to scrub into all the crevices and rinse the dirt off of your dishcloth frequently. NOTE: If your potatoes are very dirty, you may want to soak them first for just a bit to loosen up some of the dirt.

If you have a brand new kitchen sponge with a scrubber on one side, you could use that too. But as mentioned above, we don’t recommend using a sponge that you’ve been using to clean dishes and countertops.

Easy Oven Roasted Red Skin Potatoes Recipe

Once your red potatoes are clean, cut them into pieces that are all about the same size. Depending on the size of your potatoes, you should get about 4-8 pieces from each potato. Lay your cut red potatoes on a baking sheet.

In a small bowl, mix together your oil and minced garlic with all of the seasonings. Using a basting brush to brush the mixture onto your potatoes.

Place in the oven and bake for about 30-35 minutes, or until potatoes are tender. They are ready to serve!

    Red skin potatoes (about 7 larger potatoes)
    2 tablespoons olive oil
    2 tablespoons minced garlic
    1 teaspoon onion powder
    1 teaspoon Italian seasoning
    1/4 teaspoon pepper
    1/4 teaspoon salt


    Instructions

    Preheat your oven to 400 degrees F. Scrub/wash your potatoes with a potato brush. Grease a baking sheet or line it with parchment paper.

    Cut your potatoes into small chunks that are all about the same size by cutting each potato in half and then cutting each half in half or fourths (depending on the size of your potatoes). Lay the potatoes on your prepared baking sheet.

    Mix together oil, garlic, onion powder, Italian seasoning, salt and pepper, and brush onto the potatoes. Bake for 30-35 minutes. Serve.

    I love this recipe. It is so easy and the potatoes are cooked to perfection! I bake them at 400 degrees about 45 minutes.

    Outstanding results with this recipe! I cook for my wife and two kids on the weekends and was looking for something a little different. Am I glad I found this, because everybody loved it. I did make a slight modification and sprinkled Parmesan cheese over over the potatoes after applying the oil/garlic/seasoning mix, which resulted in a golden, slightly crispy crust. I’ll come back to this recipe again.

    Linda, I didn’t use this exact recipe, but one that was very, very similar. I, too, had a roast going at a lower temp. So I partially steamed my potatoes in the microwave, though you could do that in other ways. Then I popped them in the oven while the roast was resting, and coming up to temp for 500. The potatoes roasted to a beautiful golden brown by the time the rib roast was back in for searing. So go ahead, and partially cook those potatoes ahead and let them brown the rest of the way to complete your meal. Bon appetit!

    can I pre cook the potatoes since I have other things in the oven at a lower tempature? then turn oven up and roast them for a shorter time?

    I made these for the first time (after eating them at a restaurant) . They were deeelicious. I didn’t save the recipe and couldn’t find it when I tried to make them again, but I did remember the ingredients. I toss my potatoes in bowl. The first time was in a bag (half the oil and spices got left behind). So now I don’t go by a recipe, but this one is very similar except for the basting vs the tossing. Very simple and easy delicious side dish. My dad love them and I usually serve with a pot roast. Don’t know why I haven’t tried the Italian dressing because I cook all my meats and some veggies with it.
