This easy Slow Cooker Greek Chicken Gyros recipeis perfect for busy families. Throw the ingredients into your slow cooker and a few hours later, you’ll have delicious and healthy chicken for gyros that everyone will love. Place this meat into warm pita bread and top with tzatziki sauce and your choice of toppings.

Incorporating sandwiches into your weekly menu is one of the best ways to add an easy dinner into your menu planning.

Once a week, we have a hand-held sandwich of some kind on our menu. Our most common are hamburgers and our go-to favorite: meatball sandwiches ! But we enjoy other favorites like our Chicken Cordon Bleu Burgers and Spicy Sausage Grilled Cheese Sandwich .

The recipe we’re sharing today is another sandwich idea that we’re sure you’ll want to put into your weekly menu rotation. These Slow Cooker Greek Chicken Gyrosare easy to make and because the toppings are so customizable, they are easy to adapt for even the pickiest of eaters.

Slow Cooker Greek Chicken Gyros

To make your own slow cooker chicken for gyros, need boneless, skinless chicken breast, onion, olive oil, oregano, basil, thyme, garlic, and lemon (see the end of this post for specific amounts) . All of this is placed into your slow cooker and cooked on low for 4-6 hours.

While your chicken is cooking, you’ll also want to prepare your gyro toppings. We recommend some sliced or diced cucumbers, sliced red bell pepper, sliced red onion, sliced or diced tomatoes, lettuce, and crumbled feta cheese. Of course, customize this to your own liking — there really is no right or wrong way when it comes to topping your crockpot chicken gyros.

To hold all of your chicken gyro meat and toppings, you’ll need a soft pocketless pita bread. We usually buy the Papa Pita brand, but you can use any brand you prefer.

Slow Cooker Greek Chicken Gyros

The most traditional topping for gyros is a tzatziki sauce. It’s an easy sauce to make — simply combine yogurt with cucumbers and a few other ingredients. Get our easy tzatziki sauce recipe to pair with your Slow Cooker Chicken Gyros.

After cooking, the chicken is removed from the crockpot and chopped or shredded — either works, it’s totally up to your preference. 

To assemble your chicken gyro, place some of the chicken meat in a line down the middle of a piece of warm pita bread. Then, top the chicken with your tzatziki sauce and your choice of toppings. Of course, you can do this in any order you prefer. Add the tzatziki directly onto the pita bread and then topping with the chicken and other toppings is perfect too.

To eat your chicken gyro, it somewhat depends on how full your flatbread is. We usually fold in the sides (on either side of the fillings) wrapping everything together.  When eating, you’ll want to hold together (pinch) the back end to avoid the fillings from falling out. Alternately, you can pull together the sides and eat in the same way that you eat a taco. If you prefer, you can also wrap your gyro with foil or parchment paper.

2 pounds boneless skinless chicken breast
1 onion, diced
1 tablespoon olive oil 
Salt and pepper
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme leaves
1 teaspoon minced garlic
Juice of 1 lemon
Optional for serving: pocketless pita bread, tzatziki sauce , feta cheese, sliced red onion, sliced red bell pepper, sliced olives, sliced or chopped tomatoes, lettuce, sliced cucumber.


Instructions

Add the chicken breast and onions to a slow cooker. Drizzle with olive oil. Season liberally with salt and pepper. Add oregano, basil, thyme, and garlic. Squeeze the lemon over the top.

Cover and cook on low for about 4-6 hours, or on high for about 2-3 hours. Season with additional salt and pepper, to taste. Chop chicken or shred with a fork before serving.

Pile the chicken on top of warmed pita bread. Top with your choice of optional toppings: tzatziki sauce , feta cheese, olives, and fresh veggies. 

Notes

–This chicken mixture is also great used for a salad on top of a bed of salad mix or on top of rice.

1 red onion sliced (plus additional for serving, if desired)

Juice of 1 lemon

2 tablespoons chopped fresh oregano

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh thyme leaves

1 teaspoon minced garlic

Olive oil about 1 tablespoon, salt, and pepper

TZATZIKI SAUCE:

1/4 English cucumber, peeled

8 oz ( 1 cup ) Cold plain Greek yogurt

2 cloves garlic, finely minced

1/3 cup chopped dill, fresh or dried

1 1/2 Tbsp freshly squeezed lemon juice

1/2 tsp salt, or to taste

1/8 tsp black pepper

For serving: pita bread or rice or salad, feta cheese, sliced red onion, sliced olives, sliced tomatoes, lettuce, sliced cucumber


Instructions

Combine all of the tzatiki sauce ingredients in a mixing bowl, cover with saran wrap and place in the fridge until later.

Add the chicken breast to a slow cooker. Drizzle with olive oil. Season liberally with salt and pepper. Add oregano, basil, thyme, and garlic. Squeeze the lemon over the top.

Cover and cook on low for about 4-6 hours, or on high for about 2-3 hours. Season with additional salt and pepper, to taste. Chop chicken or shred with a fork before serving.

Pile the chicken on top of pita bread, rice, or salad. Garnish with Tzatziki sauce, feta cheese, olives, and fresh veggies.
