Sports Bar Grilled Steak Tacos

I’m so excited to share this with you all! Recently I was one of several lucky bloggers selected by Smart & Final to participate in their Grill Up Your Summer promotion. The challenge? Create one of my own grilling recipes using their line of Cattleman’s Finest beef. That’s a challenge I gladly accepted!

To get the ingredients for my recipe, I headed over to our local Smart & Final store in Las Vegas. We’ve driven by lots of times, but never went in. David told me “I think we have to get a savings card from them”. I told him no, that I didn’t think you had to do that anymore (way back when, we used to shop at Smart & Final in California and they had a “savings card” type thing like other stores). And I was right! After we entered we saw a sign that say you don’t have to have a membership or a sign up for a card. I liked that as I really don’t need another mini card on my keys.

I got started shopping for the ingredients I would need for my grilling recipe. I checked out the the Cattleman’s Finest products and decided on the Sirloin Tip which was a great price of $2.29 a pound. The package was BIG – about 10 pounds – but I figured this would work out well. I wanted 4-5 lbs alone for the tacos and this would leave enough for another meal or two. I’m all for buying a bigger package to save money.

I grabbed other things for my recipe too: corn tortillas, Colby cheese, Coca-Cola…and BEER! I was very pleased with the prices I found and it reminded me why I used to shop at Smart & Final in California. I LOVE shopping in bulk too. I would rather buy a big package of something to save money and save me a future trip to the store!

Ok, onto my recipe…

I’m not a beer drinker. Never have been, and probably never will be. David, on the other hand, he is a beer drinker. So, if the two of us go out to a sports bar type place, you can pretty much guarantee that you will see me with a soda (cola) and him with a beer.

So, my recipe is my way of combining our two sports bar favorites: beer and cola. A little marriage made in sports bar heaven. It’s pretty simple, but gives you some great flavors.

To start, I minced some garlic cloves, sliced up some onion, and roughly chopped up a can of chipotle peppers. I added all this into the bottom of big glass bowl.

I poured in two bottles of beer. You really can use any kind you like, but we like it with a pale ale. We used Blue Moon (and as someone who doesn’t like beer, I do LOVE their label design and ads).

Next, I added in 2 cans of Coca-Cola. And even though I drink diet usually, don’t use diet for this. I’m also a drinker of both Coke and Pepsi, but I prefer Coke for this, but I suppose you can use either. Stir it up and add in your steak pieces. Remember, my huge package of Cattleman’s Finest Sirloin Tip? I cut it in half and then one of the halves I cut into smaller steak sized pieces. Easy peasy. Now, cover and refrigerate for 8 hours or so.

After the beef has hung out in the marinade for 8 hours or so, it’s time to grill it. We also grilled some skewers full of yellow and red peppers and onions. YUMMY!! (Excuse the crazy glowing image – we grilled when it was starting to get dark and I don’t have adequate lighting outside)

We grilled it to medium-well and then sliced it thinly.

It’s time to eat! To assemble, I laid a few pieces of the grilled steak on my corn tortilla, added some pepper and onions, a bit of shredded Colby cheese and cilantro. You can add just about anything you like: lettuce, guacamole, sour cream, tomatoes, salsa…go crazy, go wild!

So, there is my Sports Bar Grilled Steak Tacos! It’s one of my favorite meals – and if I tell David that I am making any recipe that calls for beer or liquor, he is thrilled. Seriously. I mean, I can cook just about anything and the guy is happy, but if I add alcohol to the mix, I’ve got the happiest husband on the planet.

Ingredients

  • 2 small onions (sliced)
  • 4 cloves garlic (minced)
  • 1 in can Chipotle peppers adobo sauce ( 7 oz , roughly chopped)
  • 2 bottles of your favorite beer
  • 2 cans Coca-Cola (not diet)
  • 4 5 lbs Cattleman’s Finest Sirloin Tip (or your favorite beef cut – cut into smaller steak sized pieces)
  • Corn tortillas
  • Optional toppings: shredded cheese (salsa, guacamole, sour cream, shredded lettuce, cilantro, etc.)

Instructions

  1. Combine first 5 ingredients in order in a large glass bowl. Carefully add beef to marinade mixture, making sure all pieces are covered by the marinade. Cover and refrigerate for about 8 hours, with flipping and moving the pieces in the marinade about 4 hours through.
  2. Grill on medium heat to preferred doneness. We grilled ours to medium-well, about 6-7 minutes each side (an internal temperature of about 155 to 165 degrees F). This will vary for each person as it depends on how thick your steaks are.
  3. Remove from the grill and allow pieces to rest, covered, for about 10 minutes. Slice thinly across the grain. Serve in warmed tortillas with your choice of toppings.
