I don't know what mornings are like in your house, but some day's I am amazed that my hair is brushed before I'm in the car trying to remember if I locked the front door a mile from home and dreading the fact that I will ultimately be late because I had to double tripe check just in case. (The door is locked, every single time). So breakfast is generally an overlooked part of our day. A part of the day I am working really hard to put back on track. I wanted to give us some options that were quick and easy to grab and go in the wee hours and these Baked French Toast Sticks popped into place along with an assortment of yogurts and oatmeal. Best part? They can be made ahead in big batches, and frozen.

That's right. Make ahead and freeze for later. 

Pop your Pre-Made French Toast Sticks in the Oven, and Bam. Breakfast.

It doesn't get much more weekday easy than that. (Oh, and these guys are like 100 times better than the ones you grab from a box and nuk. Preheat the oven. Worth it).

Baked French Toast Sticks

These Baked French Toast Sticks are quick and easy to grab and go in the wee hours of the morning. Best part? They can be made ahead in big batches, and frozen.

Ingredients

  • 1 loaf Texas Toast bread - Challah, or Brioche
  • 1 ½ cup heavy cream
  • 3 eggs
  • 2 teaspoon cinnamon - plus 1 additional teaspoon for sprinkling
  • 1 teaspoon sugar
  • ½ teaspoon vanilla
  • Salt

Instructions

  • Slice the bread into 1" strips and arrange on a wire rack for 1 to 2 hours. (I let my bread get stale before soaking it).
  • When ready to cook, preheat the oven to 375 degrees F.
  • Prep a baking sheet for cooking by lining with parchment paper.
  • Combine the heavy cream, eggs, 2 teaspoon cinnamon, vanilla, and salt into a shallow dish.
  • Toss the 1 teaspoon sugar and additional 1 teas cinnamon in a small bowl for sprinkling later; Set aside.
  • Dip each bread stick into the batter and roll around to coat all sides. Let excess wash drip off and arrange on the baking sheet to fill the pan, leaving a 1" boarder between each stick.
  • Bake for 15 to 18 minutes, until golden brown, flipping once halfway through bake time.
  • Sprinkle immediately with cinnamon sugar when removing from the oven. Flip and sprinkle the other side. Let cool.
  • Repeat as needed to finish up the loaf of bread.
  • Serve with a small cup of syrup for dipping.

To Freeze and Use Later

  • Place in freezer in a single layer to freeze for 30 minutes before tossing into a large resealable freezer-bag to freeze in batches as needed for busy weekdays.
  • To Reheat preheat the oven to 350 and heat the French Toast Sticks in the oven or in a toaster oven. They will taste so much better, and have a much more enjoyable texture than trying to microwave them.

    What a great idea!! I remember having those french toast sticks from the frozen department when I was little. I used to love the days Dad would "make" me french toast sticks haha.
