Apple Butter Spice Cake Recipe from Clumsy CrafterI know what you’re thinking, “is that a pumpkin bread recipe?”.   No, somebody (me) just had a brain fart and put pumpkins in the picture. If you’re looking for a great gluten free pumpkin bread recipe than you can find one right here.   However this Apple Spice Cake recipe is just as yummy and the perfect addition to your fall treats and gift giving.So no, it’s not pumpkin bread but it’s better! Today I’m going to share a great recipe for Apple Spice Cake.  One of my amazing readers tipped me off to this recipe, originally found at Musselmans , on my Facebook Page (thank you Jimmie!). So I took her advice and tried it.  It’s really good. Like you might eat 3/4ths of the loaf good. Might being the keyword , I’m not admitting anything!  If you love spice cakes but want to change it up a bit since pumpkin bread is everywhere right now, this is a great option!  It’s so easy that your kids can do it . I know because my kids baked the one that you’re looking at in the picture. They also baked a few for people in our community as a thank you gift.  Then they acted like they were unable to understand me when I said, “go clean your room”.  Rather than flavoring this cake using applesauce or dicing apples by hand, this recipe uses apple butter. Apple butter is amazing stuff. You know it’s great when the word butter is in the title. Just ask The Pioneer Woman , she’ll agree.  You can easily find it at the store near the jams and jellies or you can buy it online.   You simply pour one cup of apple butter into the batter after all the other ingredients have been added, mix lightly, and you’re good to go! And if you lick the spoon that the apple butter was on after you’re done, no one will know.  You can find the printable recipe below. Enjoy!

For the cake
  1. 2 cups all purpose flour (substitute 1:1 Gluten Free Flour mixed for GF baking)
  2. 1 teaspoon baking soda
  3. ½ teaspoon salt
  4. ½ teaspoon nutmeg
  5. ½ teaspoon cinnamon
  6. ½ teaspoon ground cloves
  7. ¾ cup sugar
  8. ½ cup butter
  9. 2 eggs
  10. ½ cup buttermilk
  11. 1 cup apple butter
For the icing
  1. 1 cup powdered sugar
  2. 2 tablespoons orange juice
Instructions
  1. Preheat oven to 350 degrees and grease one large loaf pan or four mini loaf pans.
  2. In a large bowl mix all the dry ingredients until blended with a whisk or fork.
  3. In a seperate bowl, cream the butter and sugar. Add in eggs one at a time, mixing in between each egg.
  4. Alternate adding the buttermilk and dry ingredients into the wet ingredients until it is well mixed.
  5. Finally add in the cup of apple butter and mix until blended.
  6. Pour the batter into prepared pans and bake for 1 hour for a large loaf pan or 45 minutes for mini loaf pans.
  7. Let cool before removing from pans.
  8. While the cake cools, make the icing.
  9. Place the one cup of shifted powdered sugar into a bowl and add in the 2 tablespoons of orange juice. Mix well until no lumps remain and then pour over cooled cake and let set for a few minutes before serving.
