Easy Mojito Fruit Salad Recipe

Celebrate summer with this refreshing Mojito Fruit Salad recipe! Watermelon, strawberries, and more are combined with lime and mint for a deliciously easy side dish.

With living in a hot desert, meals that don’t heat up our house are a must in the summertime. We have sandwiches and salads for dinner often and when a meal does require more cooking, we either use our slow cooker (like our Slow Cooker Greek Gyros ), our electric pressure cooker (like our Sweet Potatoes with Chorizo ), or we cook it outdoors on our Big Green Egg.

For summer side dishes, we like to keep them as simple as possible with minimal cooking too. Some of our most favorite summer side dishes are our Chedda r -Bacon Potato Salad and Grilled Caprese Zucchini Boats . Sometimes we keep it even more simple by having tortilla chips and salsa or potato chips with an easy Sour Cream Chip Dip .

Another family favorite in the summer is a simple side dish of watermelon or a summer fruit salad. It’s so easy to buy your favorite fruits, wash, cut, and toss together! We love this Summer Fruit Salad with Cinnamon-Honey Syrup , but another favorite is today’s recipe: Mojito Fruit Salad!

What is a Mojito Fruit Salad?

Traditionally, a “mojito” is a refreshing summer cocktail made with rum, sugar, lime, and mint. For a Mojito Fruit Salad, we change things up by using the same flavors, but combining them with a bowl full of colorful and delicious fruits! It’s just as amazing as you’re picturing.

To make your own easy fruit salad, you will need several different fruits, some sugar, fresh mint, and lime juice. Rum is another ingredient, but you can leave this out if you prefer. I have made it both ways and both are delicious.

If you don’t like any of the fruits listed, or you aren’t able to find them in your local grocery store, no problem. Simply substitute the amount for one or more of the fruits you do like.

How To Make Melon Balls

For the watermelon and the cantaloupe, we recommend that you make little “balls” with the melon. It gives a really nice look to your Mojito Fruit Salad, which is especially preferred if you are serving to guests or taking it to a party.

To create these melon balls, you’ll need a melon baller .

A melon baller is usually a double-sided metal scoop, with each scoop being a different size. By pressing and rotating the baller into the fruit, you are able to scoop out a ball of the fruit.

If you don’t have one, I recommend that you add it to your kitchen. Not only can you use it for fruit salads, but also for scooping cookie dough, and removing the seeds from apples, other fruits, or even vegetables. You can even scoop out the center of cupcakes to create filled cupcakes!

If you don’t have a melon baller, you could also use a rounded teaspoon or tablespoon measuring spoon. Another idea is to skip making melon balls and simply cut the melon into pieces or cubes.

How To Make Mojito Fruit Salad

To make this Mojito Fruit Salad recipe, you’ll first get started with the sugar, mint, lime juice, and the rum, if you are using it.

Place the sugar and mint in a small bowl. Muddle the mint leaves into the sugar. This means to press and smash the leaves into the sugar, which you can do with a muddler . If you don’t have a muddler, you can use the end of a wooden spoon. After muddling the mint leaves, remove them from the sugar and stir in the lime juice and rum.

After your mojito dressing is made, place all that gorgeous fruit you’ve prepped into a large bowl — I like using my largest clear glass Pyrex bowl . Pour the mojito dressing over the fruit and gently combine. Cover the bowl and refrigerate for at least 1 hour. Before serving, gently toss the fruit to ensure that it’s coated with the mojito dressing.

Ingredients

Scale

1 tablespoon granulated sugar

5 sprigs fresh mint, leaves torn in half & stems discarded

3 tablespoons fresh lime juice

1 tablespoon rum (optional)

1 cup seedless watermelon, balled

1 cup seedless grapes

1 cup cantaloupe, balled

1 cup strawberries, hulled and quartered 

1 cup kiwi, peeled and quartered

1 cup fresh blueberries


Instructions

In a small bowl, add the sugar and mint leaves. Muddle the mint leaves into the sugar (pressing/crushing/rubbing the leaves into the sugar to release the mint flavor). Remove the mint leaves. Stir the lime juice and rum (if using) into the sugar to create a mojito dressing. Set aside.

In a large bowl, gently mix together all of the fruits. Drizzle the mojito dressing over the fruit mixture and gently combine the dressing with the fruit. Cover the bowl and refrigerate at least 1 hour.

Before serving, gently combine the fruit with the dressing one more time. 

Notes

–Feel free to substitute other fruits or more or less of one fruit. Other fruits to try in this recipe are mango, raspberries, and honeydew.

–Variation: add a sprinkle of shredded coconut to the fruit.
